These our farm produceExtra Virgin Olive Oil made with olives picked exclusively by hand. Within a maximum of three hours from the harvesting, the olives (even if in small quantities) are transported to the squeezing system so that no phenomenon of fermentation can begin and the organoleptic properties of the fruit and its acidity don’t change. The harvesting in the fields begins and ends in the month of October when the olives are still green and not ripe. The choice to complete the harvesting within October determines a limited production, but, at the same time, it allows us to obtain a product superior in quality that maintains and exalts all the properties of the fresh fruit. The result of it all is an oil of excellence, from the intense green colour with golden glares, dense with some hot notes and a penetrating olive scent.
