it’s easy to say [..cuisine…] …but its history?
our course is not confined to simple practical work, the guide rules of the courses are:
- the food between history and culture. The Sicilian cuisine as a result of its history, that is a mix of poverty, foreign dominations, earth and sea
- the success of the Mediterranean diet and the Sicilian cuisine as a gastronomic research of the territory between produce, typical dishes, originality and innovation
- the produce of nature in south-eastern Sicily (the use of local and seasonal herbs)
the cookery courses are conducted in collaboration with Chefs and Teachers of Professional Catering Colleges and, for every course, a historical documentation will be given
